The animal on the rail usually belongs to somebody — a family, a restaurant, a customer waiting on a specific cut list — and the paperwork has to prove which animal became which package. Freezer inventory tracks what is on hand by owner, so a customer's packages are findable months later, and direct-to-consumer packs print with the weights and cut names the buyer expects.
