Fish is bought whole and sold by the portion, so the entire margin lives in the gap between the two. PPS measures whole-to-portion fillet yield by species against the actual weights coming off the scale — not a standard someone typed in once and never revisited.

The part that changes how a fish house runs is where that yield is measured. PPS reports yield by cutter, by room, and by station, not just as a plant-wide number at month end. A plant-wide figure tells you something slipped. Yield attributed to the bench it happened at tells you where and who — which turns a number into training, a schedule change, or a conversation you can actually have.

Product arrives against a purchase order and is received with the scanner, so what was ordered and what showed up are reconciled at the dock rather than in accounting. Catch lots are recorded by vessel and date, with species and origin captured at intake and carried on every downstream transaction. Weighing is catch weight throughout, on Rice Lake 1280 stations with printers housed in stainless steel washdown enclosures — built for a room that gets hosed down every night.

Case, piece, and pallet labels come out of the built-in label editor, carrying species and origin information and printing GS1 case labels in the format retail and foodservice buyers specify. Because the editor draws on the same records as production, the barcode says what the lot actually is.

Traceability is serialized from receiving through the case that leaves the dock: every piece, case, and pallet carries its own number, and the chain is a record the floor creates while it works.
